A specialty with a typical mediterranean flavour, dried tomatoes are a result of the farmerโs need to preserve food for the winter in a simple manner. Picked when they are fully ripe, the tomatoes are sliced in half and exposed to the warm southern sun until perfectly dried. The aroma and flavour of summer are thus captured in the pulp for a long time, ready to be returned to the palate when consumed, softened in oil, vinegar and aromas.
